Delicius Seafood Paella

Here’s a recipe for a classic Seafood Paella, followed by a message about Poseidon’s Paella catering services:
Ingredients:
- 1 lb mixed seafood (such as shrimp, clams, mussels, calamari, etc.)
- 2 cups bomba rice (or other short-grain rice suitable for paella)
- 4 cups fish or seafood broth
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tomato, grated or finely chopped
- 1/2 cup dry white wine
- 1 teaspoon smoked paprika (pimentón)
- A pinch of saffron threads
- Salt, to taste
- Olive oil
- Lemon wedges, for serving
- Chopped parsley, for garnish
Instructions:
- Prepare the Seafood:
- Clean and prepare the seafood as needed (peel shrimp, scrub mussels and clams, slice calamari into rings). Set aside.
- Make the Sofrito:
- In a large paella pan or skillet, heat a few tablespoons of olive oil over medium heat.
- Add the chopped onion, garlic, and red bell pepper. Sauté until softened, about 5-7 minutes.
- Stir in the grated or chopped tomato and cook for another 3-4 minutes until the mixture is thick and fragrant.
- Add Rice and Broth:
- Stir in the bomba rice and smoked paprika, coating the rice with the sofrito mixture.
- Pour in the fish or seafood broth and white wine. Add the saffron threads and season with salt to taste.
- Arrange the Seafood:
- Nestle the mixed seafood into the rice mixture, distributing evenly across the pan.
- Gently press the seafood into the rice but avoid stirring too much to develop a socarrat (crispy bottom layer).
- Simmer and Cook:
- Bring the paella to a simmer over medium-low heat. Cook for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed. Rotate the pan occasionally for even cooking.
- Finish and Serve:
- Once the rice is cooked and the seafood is done, remove the pan from the heat.
- Cover the paella with a clean kitchen towel and let it rest for 5 minutes.
- Garnish with chopped parsley and serve hot with lemon wedges on the side.
