Delicius Seafood Paella

Here’s a recipe for a classic Seafood Paella, followed by a message about Poseidon’s Paella catering services:

Ingredients:

  • 1 lb mixed seafood (such as shrimp, clams, mussels, calamari, etc.)
  • 2 cups bomba rice (or other short-grain rice suitable for paella)
  • 4 cups fish or seafood broth
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, grated or finely chopped
  • 1/2 cup dry white wine
  • 1 teaspoon smoked paprika (pimentón)
  • A pinch of saffron threads
  • Salt, to taste
  • Olive oil
  • Lemon wedges, for serving
  • Chopped parsley, for garnish

Instructions:

  1. Prepare the Seafood:
    • Clean and prepare the seafood as needed (peel shrimp, scrub mussels and clams, slice calamari into rings). Set aside.
  2. Make the Sofrito:
    • In a large paella pan or skillet, heat a few tablespoons of olive oil over medium heat.
    • Add the chopped onion, garlic, and red bell pepper. Sauté until softened, about 5-7 minutes.
    • Stir in the grated or chopped tomato and cook for another 3-4 minutes until the mixture is thick and fragrant.
  3. Add Rice and Broth:
    • Stir in the bomba rice and smoked paprika, coating the rice with the sofrito mixture.
    • Pour in the fish or seafood broth and white wine. Add the saffron threads and season with salt to taste.
  4. Arrange the Seafood:
    • Nestle the mixed seafood into the rice mixture, distributing evenly across the pan.
    • Gently press the seafood into the rice but avoid stirring too much to develop a socarrat (crispy bottom layer).
  5. Simmer and Cook:
    • Bring the paella to a simmer over medium-low heat. Cook for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed. Rotate the pan occasionally for even cooking.
  6. Finish and Serve:
    • Once the rice is cooked and the seafood is done, remove the pan from the heat.
    • Cover the paella with a clean kitchen towel and let it rest for 5 minutes.
    • Garnish with chopped parsley and serve hot with lemon wedges on the side.
